Garlicky Kale Salad with Tandoori Chickpeas



This vibrant vegan salad combines the robust flavors of garlicky kale with the crunch of crispy tandoori roasted chickpeas, creating a delightful dish that's both nutritious and satisfying. Perfect for a quick and flavorful meal!

Ingredients:

  • 1 bunch kale, stemmed and chopped
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil, divided
  • 2 teaspoons tandoori spice mix
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 2 tablespoons nutritional yeast optional
  • 1/4 cup sliced almonds, toasted

Instructions:

Preheat oven to 400F 200C

In a bowl, toss chickpeas with 1 tablespoon olive oil and tandoori spice mix until coated

Spread onto a baking sheet and roast for 20-25 minutes, or until crispy, shaking the pan halfway through

In a large bowl, massage kale with remaining olive oil, minced garlic, lemon juice, salt, and pepper for about 2-3 minutes or until kale is softened

Toss in nutritional yeast if using

Top the kale with crispy chickpeas and sliced almonds before serving

Slow Cooker Taco Meat



This recipe for slow cooker taco meat is very simple to make and makes flavorful, tender beef that goes well with tacos, burritos, nachos, or any other Mexican-style dish. After browning the ground beef, put it in the slow cooker with the bell peppers, onions, garlic, taco seasoning, salsa, and beef broth. Leave it to cook while you go about your day.

Ingredients:

  • 2 lbs ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1/2 cup beef broth

Instructions:

In a skillet, brown ground beef until no longer pink, then drain excess fat

Transfer cooked beef to the slow cooker

Add diced onion, bell pepper, and minced garlic to the slow cooker

Sprinkle taco seasoning over the ingredients in the slow cooker

Pour salsa and beef broth over everything in the slow cooker

Stir to combine all ingredients

Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally

Once done, use a fork to break up any large chunks of meat and stir well

Serve the taco meat in tortillas or over rice, topped with your favorite taco toppings

Breakfast Grilled Cheese with the Nicer Slicer



Breakfast Grilled Cheese with the Nicer Slicer is a hearty and tasty way to start the day. This breakfast sandwich has tasty ham, crispy bacon, runny fried eggs, and melted cheddar cheese. It will satisfy your morning hunger.

Ingredients:

  • 8 slices of bread
  • 4 eggs
  • 1 cup shredded cheddar cheese
  • 4 slices of ham
  • 4 slices of bacon
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions:

Put the bacon in a skillet and cook it over medium-low heat until it gets crispy

Take it off and let it dry on paper towels

Cook the ham slices in the same pan until they are warm all the way through

Take it out and set it aside

Melt 1 tablespoon of butter over medium-low heat in a different nonstick skillet

Cut the cheddar cheese into thin slices with the Nicer Slicer while the butter melts

Break an egg into a small bowl

When the butter is hot, carefully slide the egg into the pan

Do the same thing with the rest of the eggs, making sure to keep them separate in the pan

Add salt and pepper to the eggs, then cook them until the whites are set but the yolks are still warm

That's how long it should take

While the eggs are cooking, put one slice of bread on a clean surface and top it with cheddar cheese

Then add a slice of ham, a slice of bacon, and finally a fried egg

Put another slice of bread on top of each sandwich and gently press them together

Add one more tablespoon of butter to the pan you used to cook the eggs and melt it over medium-low heat

Carefully put the sandwiches in the pan

Cook for about two to three minutes on each side, until the bread is golden brown and the cheese melts

If you need to, you can add more butter to the pan

When the sandwiches are done the way you like them, take them out of the pan and let them cool for one minute

Then, cut them in half
