Ingredients:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into cubes
- 1 large egg yolk
- 1 tablespoon ice water
- 8 ounces mascarpone cheese
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 pound fresh strawberries, hulled and sliced
- 2 tablespoons strawberry jam
Instructions:
In a food processor, combine flour, granulated sugar, and salt
Pulse to mix
Add butter and pulse until mixture resembles coarse crumbs
Add egg yolk and ice water, pulse until dough comes together
Shape dough into a disk, wrap in plastic, and chill for 30 minutes
Preheat oven to 375F 190C
Roll out dough on a floured surface to fit into a 9-inch tart pan
Press into the pan and trim excess
Prick bottom of dough with a fork and chill for 15 minutes
Bake crust for 15-18 minutes or until golden brown
Let cool completely
In a mixing bowl, beat mascarpone cheese, powdered sugar, and vanilla until smooth
Spread mascarpone mixture evenly over cooled crust
Arrange sliced strawberries on top of the mascarpone layer
In a small saucepan, heat strawberry jam until melted
Brush jam over the strawberries
Chill tart in the refrigerator for at least 1 hour before serving
Slice and serve chilled
