Ingredients:
- 2 lbs boneless, skinless chicken breasts, cubed
- 4 cups chicken broth
- 2 cups water
- 1 onion, chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 2 zucchini, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and garlic, saut for 2-3 minutes until fragrant
Add cubed chicken and cook until no longer pink, about 5 minutes
Stir in carrots, celery, and zucchini
